A one-pan harvest chicken bowl with cinnamon apples, toasted cashews, and dates — ready in about 10 minutes, with almost no cleanup.

I had a 10 oz bag of Super Blend Slaw sitting in the fridge and no plan for it, which is usually how my best recipes happen. It was a hot day, I had zero interest in standing at the stove, and I wanted something that felt like fall without asking much of me. This harvest chicken bowl is what came out of that — cinnamon-warmed apples, toasted cashews, chewy dates, and whatever protein was already in the fridge, all in one pan.
I didn’t set out to write this one up either. But the cinnamon got me thinking about warmth and comfort in a way that felt worth sharing, and the whole thing came together so easily that it felt wrong not to.

Why This Harvest Chicken Bowl Works for MS
This bowl was built for the days when a hot kitchen is the last place you want to be. Everything happens in one pan, the slaw is already shredded, and there’s no sauce to whisk together or extra bowl to wash.
That matters more than it sounds like it should. Managing MS naturally means finding meals that give your body real nourishment without costing you energy you don’t have. This is one of those recipes — a bagged slaw blend, leftover chicken, and a handful of pantry staples, so there’s almost no prep standing between you and dinner.
This is the kind of meal I reach for when I want something warm and a little sweet, but my body has already told me it’s done working today.
Why Every Ingredient Earns Its Place

Super Blend Slaw: This is the base of the bowl and the reason there’s almost no chopping. It steams right in the pan with a little water, so there’s no separate pot and no cutting board involved for the vegetables.
Raw Cashews: Toasting these first in a little olive oil, stirring for 2–3 minutes, gives the bowl its crunch. I pour them straight into the serving bowl once they’re done — one less dish to wash later.
Apple: Chopped into bite-sized pieces and cooked right in with the slaw, the apple softens just enough to pick up the cinnamon and turn the whole bowl warm and a little sweet.
Chicken (or your protein of choice): I use leftover chicken here, but this works with whatever protein you have on hand. If you’re avoiding meat, hemp seeds stir in easily and add a good dose of plant-based protein.
Cinnamon: This is the ingredient that makes the bowl feel like a harvest dish instead of just a stir-fry. Cinnamon always reminds me of warmth and comfort, but it’s worth knowing that not all cinnamon on the shelf is created equal.
🌿 Healing Tip:
Spices like cinnamon aren’t held to the same testing requirements as many other foods, and independent testing has repeatedly found detectable heavy metals in a number of cinnamon products on the market. A 2025 study out of Lancaster, PA found arsenic, cadmium, and lead in the large majority of spice samples tested — store-bought and home samples alike — which is part of why I’m choosy about which brand of cinnamon I keep in the kitchen. Read the research on PubMed →
I reach for the 365 by Whole Foods Market Organic Ground Cinnamon — it was one of only six brands, out of 36 tested, that Consumer Reports’ 2024 nationwide investigation flagged as having little to no detectable lead. No cinnamon has been tested down to zero risk, but this is the brand I feel best about keeping in regular rotation.
Dates: A little natural sweetness that plays off the cinnamon and apple. I “chop” mine with kitchen scissors instead of a knife — it’s faster, and it’s one less cutting board to deal with. I add them straight into the bowl with the cashews.
How to Make It: One Pan, 10 Minutes
The whole point of this harvest chicken bowl is that nothing sits around waiting on anything else.
Start by adding a handful of cashews to a skillet with a little olive oil. Stir for about 2–3 minutes, then pour them into a serving bowl — the same one you’ll use for dinner, so there’s one less dish to wash.
In the same skillet, add the slaw with a splash of water and cover so it steams. While it steams, chop the apple into bite-sized pieces. Add the apple, cinnamon, and chicken (or hemp seeds, if you’re skipping meat) to the pan, and cook until the apple is tender.
While that’s cooking, chop 2 or 3 dates with kitchen scissors — more or fewer depending on how sweet you want it — and add them to the same bowl the cashews are in.
Once the slaw is done, stir in the cashews and dates, mix everything together, and serve while it’s hot.
🌿 Healing Tip:
On the days when fatigue is winning, giving yourself permission to lean on shortcuts — a bagged slaw blend, leftover chicken, kitchen scissors instead of a cutting board — is not something to feel guilty about. A simpler version of a nourishing meal still beats skipping the meal altogether.
Easy Ways to Make This Harvest Chicken Bowl Your Own
- Swap the protein. Leftover chicken, rotisserie chicken, or turkey all work well here.
- Go meat-free. Hemp seeds stir in easily for anyone skipping meat and add a solid dose of plant-based protein.
- Change the crunch. No cashews on hand? Walnuts or pepitas (pumpkin seeds) work just as well.
- Adjust the sweetness. Use 2 dates for a lighter sweetness or 3 if you want it to taste more like dessert.
- No dates on hand? A small handful of raisins (about 2 tablespoons) makes an easy swap — no chopping required, just stir them in with the cashews.
Common Questions
Can I use a different slaw blend? Yes — any bagged slaw mix will work. Super Blend Slaw is just what I had on hand.
Do I have to use fresh apple? Fresh works best here since it holds its shape as it cooks, but any firm apple variety you have will do.
Is this bowl good for a day when I’m especially fatigued? Yes — this is exactly the kind of dinner it’s meant for. One pan, minimal chopping, and almost no cleanup.
How long do leftovers keep? Leftovers keep in the refrigerator for 3–4 days. I’d hold off on adding the cashews until you reheat, so they stay crunchy.
