Cuisine American
- 1 handful raw cashews
- 1 tablespoon olive oil
- 10 oz bag Super Blend Slaw or similar slaw mix
- A little water for steaming
- 1 apple chopped into bite-sized pieces
- Cinnamon to taste
- 1-2 cups leftover chicken or hemp seeds, for a meat-free option
- 2-3 dates chopped
Add the cashews and olive oil to a skillet. Stir for 2–3 minutes, then pour into a serving bowl.
In the same skillet, add the slaw with a little water. Cover and let it steam.
While the slaw steams, chop the apple into bite-sized pieces.
Add the apple, cinnamon, and chicken (or hemp seeds) to the pan. Cook until the apple is tender.
While that cooks, chop the dates with kitchen scissors and add them to the bowl with the cashews.
Once the slaw is done, stir in the cashews and dates. Mix well and serve hot.
Protein: Any leftover protein works here — chicken, turkey, or hemp seeds for a meat-free version.
Dates: Kitchen scissors make quick work of chopping dates — no sticky knife or cutting board required.
Leftovers: Keep in the refrigerator for 3–4 days. Add the cashews fresh when reheating so they stay crunchy.
