This easy mango salsa recipe comes together in 5 minutes with frozen mango, a mini sweet pepper, and a squeeze of lime. No chopping marathon and no standing at the stove.

Easy mango salsa recipe in a glass bowl topped with fresh cilantro and red chili flakes.

This mango salsa recipe is about as easy as it gets. It takes only a few ingredients and about 5 minutes, and it’s ready when you are.

I keep my recipes quick because I know how hard it can be to cook when you’re living with MS. Some days, even chopping an onion feels like too much. This salsa skips most of that work.

I make it with frozen mango, so there’s no peeling or cutting a slippery fruit. I use a small food chopper, so there’s very little knife work. And I use just one small tomato from our garden, which brings me to the tomatoes.

Why This Mango Salsa Recipe Works for MS

This salsa is simple on purpose. You only need a handful of ingredients, and most of them are already in my kitchen.

  • Frozen mango means no prep. Thaw it in the fridge overnight, and it’s ready to go.
  • Mini sweet peppers are easy. I just cut off the top, cut them lengthwise into quarters, and scrape out the seeds. My favorites are the red ones because they’re sweeter.
  • A small chopper does the work. Pulse, blend, done.
  • You control the spice. I like a little heat, but you can leave it out.

My Fatigue-Friendly Shortcuts

These are the little habits that make recipes like this doable on low-energy days.

Juice citrus ahead of time. On days when I have more energy, I juice a bunch of lemons, limes, and oranges and store the juice in glass jars with lids. These are the lids I purchased. Then when a recipe calls for lime juice, it’s already waiting for me. I have lids in different colors, so I always use a green lid for lime juice. It’s a small thing, but I never have to guess.

Chop cilantro ahead of time. I do the same with cilantro. I snip it with scissors, then store it in a glass container so it’s ready whenever I need it.

Use a small, inexpensive food chopper. I use a little chopper similar to this Black+Decker chopper for this recipe. It’s easy to use and easy to clean.

Fresh Tomato or Canned?

For this mango salsa recipe, I used one small tomato from our garden.

We bought two tomato plants from our local farmers market this year, and they are the best tomato plants we’ve ever bought. At one point, one plant had 30 tomatoes on it! We’ll definitely buy our plants from that farmers market again next year.

With so many tomatoes, I’ve been making recipes like my homemade tomato paste and freezing some for winter.

The tomato is optional in this recipe. If you don’t have fresh tomatoes, you can use canned diced tomatoes. Just read the ingredient list first. I use fresh tomatoes because I personally avoid citric acid. Canned diced tomatoes are a convenient choice when you want less prep. Choose whichever works best for you.

Mango Salsa Ingredients

  • 1 cup frozen mango, thawed
  • 1 mini sweet pepper (red is the sweetest)
  • 1 small tomato (optional)
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • Pinch of sea salt
  • Lime juice
  • Optional: chopped cilantro
  • Optional: a tiny pinch of chili powder, or my favorite, a sprinkle of Frontier Co-op Ground Red Cayenne Chili Pepper for a little spice

A note on the seasonings: I don’t really measure the garlic or onion powder. I just sprinkle in what we like. Start with ¼ teaspoon and adjust to your taste.

Ways to Serve Mango Salsa

Here are a few easy ways to turn this into a meal:

  • Spoon it over chicken or grass-fed beef. Add some microwaveable cauliflower rice and dinner is done.
  • Stuff a lettuce wrap. Fill it with veggies and a protein, then top with salsa.
  • Top a taco or burrito bowl. It adds a sweet, fresh contrast.
  • Add it to a salad. It works like a dressing and a topping at once.
  • Make it more filling. Add diced avocado.

This mango salsa recipe is my favorite way to add flavor to simple meals without adding work. If you try it, let me know in the comments how you served it!

An easy mango salsa recipe made with frozen mango, a mini sweet pepper, and lime juice. Ready in 5 minutes with a small food chopper.
Prep Time 5 minutes
Total Time 5 minutes
Course Condiment, Side Dish
Cuisine Mexican-Inspired
Servings 4 servings

Equipment

  • Small food chopper
  • Glass bowl with a lid

Ingredients

  • 1 cup frozen mango thawed
  • 1 mini sweet pepper
  • 1 small tomato optional
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • Pinch of sea salt
  • Lime juice
  • Chopped cilantro optional
  • Tiny pinch of chili powder or ground red cayenne optional

Instructions

  • The night before, place the frozen mango in a glass bowl with a lid and let it thaw in the fridge.
  • Cut the top off the mini sweet pepper, cut it lengthwise into quarters, and scrape out the seeds.
  • Add the pepper to the chopper and pulse a few times to break it down.
  • Add the thawed mango, tomato (if using), onion powder, garlic powder, sea salt, and lime juice. Blend until it reaches the consistency you like.
  • Pour the salsa back into the bowl the mango thawed in.
  • Stir in the chopped cilantro and a sprinkle of cayenne or chili pepper, if using.
  • Serve right away, or cover and refrigerate.

Notes

  • No fresh tomato? Use canned diced tomatoes and read the ingredient list first. I avoid citric acid, so I use fresh.
  • Make it chunkier or smoother. Pulse less for chunky salsa and more for smooth.
  • Make it more filling. Top with diced avocado.
  • Prep ahead. Keep pre-juiced lime juice and pre-chopped cilantro in glass containers so this takes even less effort.
