Huckleberry Coconut Whipped Cream

A simple, elegant dairy-free dessert with a warm huckleberry sauce layered over coconut whipped cream — ready in 25 minutes and beautiful enough for company.

Equipment

  • Small saucepan
  •  Hand mixer or stand mixer

Ingredients
  

For the Huckleberry Sauce:

  • ¾ cup huckleberries, fresh or frozen
  • cup raw honey, or more to taste
  • ½ tablespoon lemon juice

For the Coconut Whipped Cream:

  • 1 can full-fat coconut milk, refrigerated overnight (I use Native Forest)
  • 1 tablespoon raw honey
  • ½ teaspoon vanilla

Instructions
 

Huckleberry Sauce:

  • Place the huckleberries in a medium saucepan over medium-high heat. If using fresh berries, crush them with a potato masher or the back of a fork. If using frozen, cook and stir frequently until the berries begin releasing their juices, then mash.
  • Add the lemon juice and honey. Stir and cook for about 5–7 minutes.
  • Reduce heat to low and continue stirring for 1–2 minutes. Leave the sauce slightly runny — it will thicken as it cools. Set aside.

Coconut Whipped Cream:

  • Place a small glass bowl in the freezer for 5 minutes to chill.
  • Open the refrigerated coconut milk carefully without shaking. Scoop the solidified cream from the top into the chilled bowl. Save the coconut water for a smoothie.
  • Using a hand mixer, whip the coconut cream with the honey and vanilla for about one minute until light and fluffy.

To Assemble:

  • Spoon some huckleberry sauce into the bottom of a clear glass.
  • Add a layer of coconut whipped cream.
  • Repeat the layers — sauce, then cream.
  • Top with fresh huckleberries and serve immediately.

Notes

  • Refrigerate the coconut milk can overnight — this step is essential for the cream to whip properly.
  • Make the sauce ahead and refrigerate for up to 3–4 days. Reheat gently before serving.
  • Save the coconut water from the can to use in a smoothie.
  • Wild blueberries are the best substitute if huckleberries aren’t available.
